FROM THE GROUND UP

Noka began with something deeply personal, inspired by Amante’s late father and a shared respect for the natural, imperfect and handmade.

Built largely by Amante himself, every element was considered as part of the whole, from the furniture and lighting to the pottery, materials and plate.

ROOTED IN LEGACY

Noka was inspired by Amante’s late father, a farmer who dedicated his life to sustainable agriculture on 150 acres in St. Joseph, Missouri.

That connection to the land shaped an identity centered around nature, simplicity, seasonality and imperfection, creating a brand that feels as considered as the space itself.

Culinary Creation

TIME AS AN INGREDIENT

Noka’s culinary philosophy is rooted in restraint, seasonality and respect for the ingredient.

Select fish are dry-aged to concentrate flavor, refine texture and allow each ingredient to reach its fullest expression. From there, fire, fermentation and careful preparation do only what is necessary.
